Low Sugar Greek Yogurt Parfait

This parfait makes for a quick and easy breakfast or snack. It’s loaded with probiotics, protein, antioxidants, and heart-healthy fats. There is no added sugar, but the juice from the berries balances the tang of the Greek yogurt. The almonds and flaxseed make it surprisingly filling.

Ingredients

  • 3-5 fresh strawberries (substitute 10-15 blueberries, blackberries, or raspberries)(you can use thawed frozen berries in their juices as well)
  • 1/2 cup plain full fat Greek yogurt
  • 1/4 cup ground flaxseed meal
  • 1/4 cup chopped almonds (substitute any chopped nut of your choice except peanuts if on a candida cleanse)
  • 1 tsp. vanilla bean powder (substitute few drops of vanilla extract)
  • 1 tbsp. cinnamon (feel free to add more to taste)

Directions:

  1. Place strawberries in small bowl or dish and muddle until fully mashed and juicy
  2. Add rest of ingredients on top of strawberries and mix, or layer for a fun presentation

Tips:

  1. You can prepare multiple parfaits ahead of time so you can easily grab and go. Just leave off the nuts until you’re ready to eat. I like to prep on the weekends to make it easier to make healthy choices when things get busy during the week.
  2. When I first started a candida cleanse and was craving sugar at night, this parfait was a great way to satiate the craving.
