Curl Up on the Couch Creamy Cauliflower Soup

I love curling up on the couch with a bowl of this soup and a good show or book. It is hearty, flavorful and leaves me feeling warm and satisfied. With cauliflower, onion, garlic, artichoke hearts and broccoli, it’s also super healthy for your gut, heart, brain, and digestive system. It’s anti-inflammatory, contains ingredients that protect against cancer, and helps with maintaining blood sugar.

Ingredients

  • 2 heads of cauliflower, washed and chopped
  • 1 onion, peeled and roughly chopped
  • 4 tbsp. minced garlic (substitute 10-12 cloves of garlic, peeled and chopped)
  • avocado oil (at least 4 tbsp.)
  • 4 cups of water
  • 2 1/2 cups of canned and quartered artichoke hearts (about 1 1/2 cans), dried and diced
  • head of broccoli, chopped into small pieces
  • 3 tbsp. Italian seasoning
  • 1 tbsp. sea salt

Directions

  1. Heat 2 tbsp. of oil in large pot (I use a Dutch oven)
  2. Brown cauliflower (I do this in batches and place the browned cauliflower in a bowl to the side). Add oil as needed.
  3. Once all cauliflower is browned, brown onions and 2 tbsp. of garlic in same pan (I also throw in any small bits of cauliflower that are left on my cutting board). Add oil as needed.
  4. Once onions and garlic are browned, add cauliflower back into pot.
  5. Add water and bring to a boil. Once boiling, reduce heat to a simmer and cook, covered, for 20 minutes (or until cauliflower is fork soft).
  6. Use an immersion blender and blend until soup is smooth and creamy (or use a blender).
  7. Add Italian seasoning, sea salt, and 2 tbsp. minced garlic, to taste.
  8. Add broccoli and artichoke hearts and allow to sit for at least 5 minutes, or until broccoli and artichoke hearts are softened to your liking.

Tips

  • Get creative.; substitute kale or spinach for the broccoli. Play with the seasoning, add more or less Italian seasoning and garlic, or swap out for something else. Add fresh herbs like thyme or rosemary.
  • This soup yields about 3 quarts, perfect for a big family meal or to portion out into mason jars for easy, healthy meals throughout the week.
  • You can portion out to save some in the freezer as well.
