
So, I won’t lie to you, these are not my favorite. They’re not terrible, just somewhat bland. But, they’re a staple in my fridge right now because they’re loaded with healthy fats, antioxidants, and proteins, have no added sugar, and are great for holding me over in between meals and satiating a sugar craving. The expression, “there’s no such thing as a free lunch,” means it’s impossible to get something for nothing. Sometimes with healthy eating, you eat things because they serve a purpose, not because they’re earth-shatteringly delicious.
Ingredients
- 10 berries (blueberries, blackberries or raspberries) or 5 strawberries
- 2 cups unsweetened almond butter (or any unsweetened nut butter of your choice, except peanut butter if on a candida cleanse)
- 2 cups unsweetened coconut flakes
- 1 cup ground flaxseed meal
- 1 cup chopped almonds or pecans
- 2 tsp. vanilla bean powder (or a few drops of vanilla extract)
- 2-4 tsp. pumpkin pie spice or cinnamon
Directions
- Muddle berries in bottom of bowl until fully mashed and juicy
- Add all other ingredients and mix by hand or with a spoon
- Form mixture into balls, similar to meatballs
- Refrigerate for at least 30 minutes before serving
Options:
- Add honey to taste for a bit more sweetness
- Add 1/2 cup of unsweetened cocoa powder or 1/4 cup of carob powder to add chocolatey notes.
- Finish with a dusting of carob powder, cinnamon and/or sea salt flakes to enhance the flavor.
