
This super simple cauliflower rice can be prepped in just a few minutes. Use it in place of regular rice or to make a cozy bowl of “oatmeal” for breakfast.
Directions:
- Chop 1 head of cauliflower into florets
- Place florets into blender
- Fill blender with water up to about 2/3s full
- Pulse until florets are broken down into rice-sized morsels (depending on the blender, this can be 5-10 seconds)
- Strain water out in mesh colander
- Yields about 6 cups of cauliflower rice, loosely packed
Pro Tip:
- I usually store half, separated out into 1 cup portions, in the freezer. Cauliflower rice thaws out very quickly and can easily be cooked while still frozen. Cauliflower tends to get stinky pretty quickly in the fridge, so I only keep out what I plan to use in the next 24-48 hours.
