Kid-Friendly Chicken, Broccoli & Quinoa

My kids go crazy for this dish.    We made a whole chicken earlier this week and had a ton leftover.  I love that this dish transforms leftover chicken into a completely new meal. 

I cooked quinoa, steamed broccoli, and combined them with the leftover chicken, bone broth, and seasonings over low heat until warm.  Even my 8 month old devoured this tonight! (I did not #foodsensitivities )

It freezes well and can easily be reheated with a little extra bone broth in a pan.   Once it’s made, it’s a complete meal in one dish.   Definitely a go-to on weeknights.
